Pecorino Romano DOP is a wonderful cheese for pairing because of its salty, sharp, and tangy profile with a rich umami depth from sheep’s milk. It’s one of Italy’s oldest cheeses, typically aged 8–12 months or more, and its boldness calls for foods and wines that can stand up to it.

Pairings
Food pairings: Fresh pear & apple do a great job of cutting through the saltiness of the cheese, while dried apricot and raisin balance with their sweetness. Similarly honey provides a richness that tempers the saltiness of the Pecorino. From a pasta point of view, you can't go past the classic Cacio e Pepe, a Roman staple.
Wine pairings: Because Pecorino is intensely salty the best wines to pair must possess either pronounced acidity, tannins or sweetness. Some white examples are: a zingy Vermentino or fuller-bodied Fiano, while red options range from a bright Chianti to sweet Vin Santo.
