Creamy Stracciatella served with warm, aromatic spiced carrots. Perfect for sharing!
Stracciatella Dip
300g That's Amore Stracciatella
2 tbsp extra virgin olive oil
2 tbsp lemon zest
½ tsp freshly cracked black pepper
Pinch flaky sea salt
Spiced Carrot Chips
3 large carrots, cut lengthways
2 tbsp honey
½ tsp ground cumin
½ tsp smoked paprika
¼ tsp ground coriander
½ tsp red pepper flakes
Extra virgin olive oil, for tossing

Freshly cracked black pepper
Step 1
Preheat the oven to 180°C and line two baking trays with baking paper.
Step 2
Peel the carrots, then slice them very thinly lengthways using a mandoline or vegetable peeler. Place in a bowl and toss with the olive oil, hot honey, cumin, smoked paprika, coriander, red pepper flakes, a pinch of sea salt and freshly cracked black pepper. Use your hands to gently coat the carrots in the spices.
Step 3
Lay the carrot slices in a single layer on the lined trays. Bake for 20–30 minutes, turning once, until lightly golden and crisp around the edges. Remove from the oven and allow to cool completely, they will crisp further as they sit.
Step 4
Bring the stracciatella to room temperature. Place in a bowl and season with lemon zest, sea salt and cracked black pepper. Gently stir to combine, then finish with a drizzle of extra virgin olive oil.
Step 5
Serve the stracciatella dip alongside the spiced carrot chips.
