Base
2 sheets butter puff pastry
1 egg, beaten
Filling
250g That's Amore Truffle Stracciatella
150g mortadella, thinly sliced
Crispy Breadcrumb
100g fresh breadcrumbs
2 tbsp olive oil
Salt and pepper
Step 1
Preheat oven to 200°C.
Step 2
Cut the pastry into 4 squares and score a 1cm border around the edge and brush with egg wash. Bake for 15–18 minutes until golden and puffed. Allow to cool slightly.
Step 3
Heat olive oil in a frying pan and add the breadcrumbs and cook until golden and crisp. Turn off the heat and set aside.
Step 4
Layer folds of mortadella over the pastry. Generously spoon over Truffle Stracciatella. Scatter with crispy breadcrumbs. Drizzle with extra virgin olive oil. Garnish with cracked black pepper and serve immediately.
