Golden-fried mortadella skewers served with creamy truffle stracciatella, combining crispy, savoury flavours with rich, indulgent cheese for the perfect crowd-pleasing bite.
250g That's Amore Truffle Stracciatella
400g mortadella slices, folded into a cube
1 cup panko breadcrumbs
Vegetable Oil for frying
Drizzle of Truffle oil
Freshly cracked black pepper
Step 1
Thread the mortadella onto skewers, either as cubes or loosely folded slices for a more textured finish.
Step 2
Heat oil in a pan and fry the skewers in batches on all sides until golden and crisp, about 2–3 minutes. Remove and drain on a paper towel, then season lightly with salt while still hot.

In the same pan, toast the panko breadcrumbs for 2-3 minutes until golden. Turn off the heat and set aside.

In a bowl, gently combine the stracciatella with truffle paste or truffle oil, keeping it soft and creamy. Season with black pepper.
Step 5
To serve, spoon the truffle stracciatella on a platter and arrange the hot skewers on a platter. Scatter the panko breadcrumbs over the top and drizzle some truffle oil all over. Serve immediately while the mortadella is crisp and the centre is warm and aromatic.
