Simple yet irresistible Tomato, Pesto and Bocconcini. A flaky buttery croissant, served with roasted cherry tomatoes, pesto, our That's Amore Bocconcini and a drizzle of extra virgin olive oil, salt, pepper and fresh basil. Easy!
2 fresh croissants
125g x That’s Amore Cheese Bocconcini
1 cup cherry tomatoes, halved
2 tablespoons basil pesto (homemade or store bought)
Handful of fresh basil leaves
Extra virgin olive oil, for drizzling
Salt & black pepper
Step 1
Preheat the oven to 180c/350f and line a baking tray with parchment paper.
Step 2
Slice your croissants in the center but careful not to cut it all the way through and place on a lined baking tray. Halve the cherrytomatoes and season them lightly with salt, pepper, and a drizzle of olive oil.
Step 3
Place the cherry tomatoes inside of the croissant along with the teared bocconcini and place into the croissant. Place in the preheated oven and bake for 10-15 minutes or until the tomatoes have slightly blistered and the cheese has melted.
Step 4
Drizzle with basil pesto, fresh basil leaves, extra olive oil and a little more salt & pepper. Serve warm.
