A delightfully quick and easy antipasto option for entertaining. Baby Burrata are the perfect size to sit on individual crispy crostini with salty prosciutto and home-made basil oil.

Ingredients

2 x That’s Amore Baby Burrata 120g Tubs (8 x Baby Burrata total)

8 slices Prosciutto

1 baguette cut into 8 slices

1/2 cup olive oil

1/4 cup fresh Basil leaves + extra basil leaves

Salt and pepper to taste

Instructions

Step 1

Preheat the oven to 180c/350f.

Step 2

To make the basil oil add the basil and olive oil into a mortar and pestle and mix until smooth. Once mixed set aside.

Step 3

Place the baguette on a lined baking tray with a drizzle of olive oil and baked for 10 minutes until golden brown. Set aside to slightly cool.

Step 4

To assemble, add some prosciutto to the baguette slices, add the baby burrata and drizzle with basil oil over the top. Add extra basil leaves and an extra drizzle of olive oil.

Step 5

Serve immediately!
