Made using fresh Gippsland cow’s milk and premium Australian black truffle, both products are creamy, rich, and designed to be enjoyed fresh. What is Truffle Stracciatella?
Stracciatellais the soft, creamy filling traditionally found inside burrata. It is made byshredding freshly stretched mozzarella curd and combining it with fresh creamuntil smooth, silky and spoonable.
Our Truffle Stracciatella is made by shredding fresh mozzarella curd and folding it through cream until smooth and luscious, before adding delicate truffle throughout. The freshness of the cheese balances the savoury depth of the truffle, allowing both ingredients to complement one another without overpowering the palate. The result is smooth, luxurious, and incredibly versatile.
How to Enjoy Truffle Stracciatella
Truffle Stracciatella is best served fresh with minimal preparation:
· Spoon generously onto toasted sourdough or warm focaccia
· Add to fresh pasta or risotto just beforeserving
· Pair with roasted mushrooms, potatoes, orseasonal vegetables

Our Truffle Burrata begins with freshly stretched mozzarella that is carefully shaped by hand into a delicate outer shell. Inside, it is filled with creamy truffle stracciatella, creating our signature burrata experience. When cut open, the centre flows naturally onto the plate, revealing smooth cream, fresh mozzarella curd and aromatic truffle throughout.
The outer mozzarella provides a soft and delicate bite,while the filling delivers richness, creaminess, and depth. The truffle enhances the flavour profile while still allowing the freshness of the cheese to remain the hero.
Rich yet balanced, Truffle Burrata is designed to be the centrepiece of a dish and enjoyed as part of relaxed winter dining.
