  1. Using a food processor, blitz Squaquerone with milk. You can use as well a canister to have a mousse like result. Place the mousse in a piping bag.
  2. Cut the rock melon in half; toss the seeds and the skin. Slice it as fin you can to make a ribbon like effect.
  3. Preheat the oven at 200. Cut the sourdough in cubes, place them in a baking tray, and bake for 5 mins.
  4. In a plate pipe the Squaquerone mousse, place the rockmelon ribbon, bresaola and the croutons. Drizzle with Olive Oil and serve.
