Instructions
  1. Cut each mozzarella in 6 large pieces.
  2. Wash thoroughly lemon leaf making sure that you take off stalks. Wrap each mozzarella piece with a lemon leaf and secure them with a skewer.
  3. Blend coriander, rocket, garlic and pine nuts with olive oil using highest speed on the blender, or food processor. However, do not blend for long. Blend for 1 minute to start with, use a spatula to combine then blend again. You might have to repeat the process with the spatula. You want to have it all combined but not too fine. Season with salt & pepper and lemon juice.
  4. Chargrill roti and cut into pieces. Chargrill mozzarella wraps till melting point.
  5. To serve, spoon the relish on a plate and place mozzarella on top. Serve with roti.
