Instructions
  1. For onion jam: heat the oil in a large pan. Add the onions and fry until they have slightly coloured.
  2. Add salt and vinegar. Cook on a very low heat for about 40 minutes.
  3. Preheat oven to 180°C.
  4. Cut each pastry sheet into 4 squares. Line 4 x lightly greased 8cm-round, fluted tart tins with pastry. Trim excess pastry and lightly prick bases with a fork.
  5. Divide lavato and fig halves between the cases.
  6. Place eggs, cream, chives, parmesan, salt and pepper in a bowl and whisk until well combined.
  7. Pour into cases and bake for 25 minutes or until puffed and set. Cool to room temperature and serve.
