Instructions
  1. For onion jam: heat the oil in a large pan. Add the onion and thyme and fry until golden.
  2. Add salt and vinegar. Reduce to low heat for about 20 minutes, until onions are cooked down to a jam consistency.
  3. Preheat oven to 180°C.
  4. Cut pastry sheet into 4 squares. Line four lightly greased 8cm-round, fluted tart tins with pastry and lightly prick bases with a fork.
  5. Place eggs, cream, chives, parmesan, salt and pepper in a bowl and whisk until well combined.
  6. Fold through the lavato cheese.
  7. Pour into cases, place figs on top and bake for 25 minutes or until set.
  8. Cool to room temperature and serve with the balsamic onion jam.
