Brushetta Scamorza and Roasted Tomatoes

Instructions
  1. Preheat an oven to 200 degrees.
  2. Place a piece of baking paper over a tray.
  3. Place the whole tomatoes and thyme into a mixing bowl. Drizzle with olive oil, and toss until evenly coated. Season to taste with salt and pepper, then spread evenly onto the prepared baking tray.
  4. Bake the tomatoes in the preheated oven until the skins pop and start to brown, 15 to 20 minutes.
  5. Cut 4 thick slices from the sourdough; drizzle with olive oil and place it in the oven till golden.
  6. Top with scamorza slices and flash again in the oven for few seconds until the cheese start to melt.
  7. Plate up the scamorza topped sourdough with the roasted tomato and serve hot!
